one down, 9 more to go.. A fantastic month so far!

ok so I finished the christening order without any stress... thank goodness! but, I mean there wasn't anything to it other than baking and simply frosting. what scares me is what's to come.  lemme give a bit of history before I continue.  so, my little baking gig started 4 years ago.  I mainly made cupcakes for friends and their children, then slowly my neighbors, and soon after that strangers lol.  Initially, I just love baking and trying out new recipes.  but since I became a stay-at-home-mom, baking became more of a second job.  well rather, a source of income!  and ever since my first baby shower order, I've been baking up a storm.  most of the time, it's been fun.  I get to create the coolest edible art for someone's special day.  so, the rewards are amazing.  but, we all know baking can be challenging.

so, I've been terrible at snapping pictures of things I've made so usually I wait until I get copies.  but, I've been making a point to at least take a quick snap right before I deliver and in return I get crappy images.  anyway, here's the christening order I did last weekend:

I made red velvets and cookies and creme.  nothing fancy. but I did try to make the cupcakes with chocolate icing look like a cross on top.

here's what I have to look forward to.... according to my baking calendar:
June 6th- red velvet cake- Tinkerbell theme
June 9th- 8" any flavor cake, any design
June 12th- 50 red velvet cupcakes and 50 strawberry creme cupcakes- Tinkerbell theme
June 12th- 24 strawberry cheesecake cupcakes- Hello Kitty theme
June 16th- 8" chocolate cake, floral design
June 18th- 24 strawberry shortcake cupcakes- Strawberry Shortcake theme
June 19th- 24 double chocolate cupcakes- Cars 2 theme
June 19th- 24 vanilla bean cupcakes with cherry filling- pink and purple theme
June 23rd- 9" chocolate caramel cake- floral design

WOW right?  The last time I had a full month with almost every weekend booked was last Christmas.  Since then, it's only been a couple of orders a month.. pictures will follow as I finish each order.  Until next time... happy baking!

let's get baking!

I have 2 orders lined up for the next 2 weekends... and it will be my reason for all the slaving I'll be doing in the kitchen.  First up, 100 christening themed cupcakes in red velvet and cookies and cream.  And the next will be a two-tiered Tinkerbell red velvet cake and 50 Tinkerbell themed cupcakes.. I haven't decided on what flavor yet.  I want to try something new since it will be up to me.  Any suggestions??? Anyone?!?!? lol

I've been going back and forth on designs but I tend to overachieve when it comes to decor.  I guess it's the competitor in me.  It needs to be perfect and a crowd pleaser.  I guess it's what needs to be done to get the customers coming back right?

I haven't even gotten the supplies I need.  I really hope everything I need to get is available.  I've procrastinated before and I ended up with an online order arriving the day after the cake was due lol.  I can't risk that since these cakes will be for little cutie pies.  I'd post a pic so you can agree but I'd have to get permission before I post.

OK with that said, now it needs to be done. Off to the store I go.  Good day world!

gimme s'MORE puhleese

So... I asked the kids what type of treat to bake over the weekend and the winner is... s'mores cupcakes!!! I guess they figured to get a head start on their favorite summer treat.  Here's how they turned out!




I had gotten this recipe somewhere online a few years ago.. it might have been through www.bigoven.com and I just tweaked it a bit to make it my own.  I've seen variations similar to mines..  I used a graham cracker crust and saved some to sprinkle on top.  I added sour cream to my chocolate cake to make it extra moist. Some recipes call for milk but I don't like using it.  Not much flavor comes out with plain diary lol.

We are going camping at the end of June.  Whohoo! I'm going to make a treat for the kiddos.  They love to roast marshmallows and slap it on a graham cracker with some chocolate but I think I'm gonna surprise them with a new treat to have while we're out in the wilderness.  I'll share that idea once it's ready.  Well, I suppose I'll post a few more pics of the cupcakes.  A little goodbye treat for your eyes :)

HELLO WORLD!

Thought I'd finally join the bloggers world and share all things cupcake.. something I've been wanting to do but just never actually did anything about it.  So, I'm pretty excited to start this.  Even though it would probably be just me reading it.

Hmmm... I haven't baked anything just for fun in sooo long.  It's just been because I had an order for a close friend/family.  I want to go back to just baking because I felt like it.  I can't remember when I last did that.  So, I'm hoping this will be my outlet and reason to doing just that.

I'll sleep on what to debut... cookie, cupcake, or something savory?
